I love pulled pork. Actually, love is probably an understatement. My father owned a restaurant specializing in BBQ, so I got it honest. 99.99% of the time when I get a craving for some ‘cue, it isn’t 8-12 hours before I want to eat it and I can get a shoulder going on the Big Green Egg. I had a boneless shoulder in the fridge just waiting to turn into juicy, smoky goodness. I decided to see what I could do with my Instant Pot. I was not disappointed. The results were like carnitas since the pork cooked in its own juices. The meat was so tender and flavorful, I didn’t need any sauce or sides – just a fork!
This would be perfect on tacos with a little onion and cilantro, a salad, or even a piece of cardboard, but why waste the cardboard?
- Boneless pork shoulder, 3-4 lbs
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon chili powder
- 1 heaping tablespoon brown sugar
Cut pork into manageable chunks. My shoulder was 3.3 lbs and I think I had about 15 pieces. Mix spices together. Rub pork with the spice mixture and place into the Instant Pot.
Using the manual setting, set the IP to high pressure for 60 minutes. Isn’t it amazing that we can have fall-apart-tender pork in 60 minutes?! I let the steam release naturally because I was doing chores around the house, but you could do a quick release if you want/need to.
Remove from the pot and shred.
The picture doesn’t do it justice. I actually made a barbecue sauce while it was cooking and didn’t even use it!
